This recipe was given to me by an old farm woman in north-central Louisiana in 1972. Mrs. Love was the perfect example of how to age gracefully. She was filled with mischief and laughter and I loved spending time with her. The cake was one of Mike and Danny’s favorite treats.
In a large mixing bowl, cream the shortening and sugar.
Add the eggs, one at a time.
Combine the dry ingredients and add gradually
Add the chopped apples and the vanilla.
Spread the batter into a greased 9″ x 12″ pan and bake at 350 degrees for 1 hour. Cool before serving.
This cake has no need for frosting because the apple jiuce and sugar combine to make a sweet crust on top.
