This is a traditional New England snack that seems to have caught on around the country. The original whoopie pie is soft chocolate cookies put together with vanilla cream filling.
3/4 cups shortening (I use a mixture of butter and vegetable shortening)
1 1/2 cups sugar
2 eggs
2/3 cups unsweetened cocoa powder
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 cups milk (I use buttermilk)
2 tsp. vanilla extract
3 cups flour
Cream together the sugar and the shortening and then add the eggs.
Combine the dry ingredients and add alternately with the milk.
Add the vanilla.
Drop by rounded tablespoons onto a greased cookie sheet.
Bake 10-12 minutes at 375 degrees.
Cool on a rack, then spread vanilla cream (see below) on the bottom of one cookie and place another cookie on it.
Filling:
3/4 cup vegetable shortening
3 cups confectioners sugar
1/3 cup heavy cream
2 tsp. vanilla
Whisk together until smooth and fluffy. If the filling needs more body, add more sugar until it’s the right consistency.
